A ZUCCHINI KIND OF DAY

My day was designated by the amount of zucchini that filled the kitchen!

Muffins...muffins...muffins...
Some got eaten, some got frozen, and some were given away. And by the way, it is so much easier giving away the muffins than the zucchini.

Sweet zucchini bread.
This is my favorite and great for the freezer and unexpected company.

Hoping we wouldn't be entirely zucchinied-out, I made zucchini patties for supper. Fried crisp and dark in canola oil, they can't be beat!

The recipe for the bread below comes from this much used (especially in the summer) vegetarian cookbook.

Zucchini Crown Bread...
one of Freddie's favorite savory breads. It is pretty, too.

Now, before the rain descends, I'm off to the garden to pick zucchini.
